Gary Visits the Isle of Mull

Gary visited the stunning Island setting of Mull for two evenings of fundraising, great cooking and local food. Both evenings were in aid of the Marie Curie cancer research charity, Isle of Mull and Iona. The first evening Gary performed a live demonstration followed by a Q & A session. Gary visited Duart Castle for the second evening, which was a intimate dinner held in a beautiful cultural and historical backdrop. During the demonstration he cooked:

Homemade pasta with a Langoustine, scallop, spinach and pesto sauce
Italian sausage Risotto with pea and parsley
Chicken pasanda with pilaf rice
Chocolate fondant with red berry compote
Apple Tarte tatin

The second evening consisted of an intimate dinner within the grounds of Duart Castle, the home of the Maclean Clan, where he cooked:

Brown crab and razor clam risotto with spinach

Hand dived scallops and sea herbs

Loin of rabbit, tarragon mouse and pancetta with mustard sauce

Pan seared loin of red deer and raw caramelised cauliflower

Oats and nuts and salsify and brambles

Game chips and roe deer sauce

Chocolate fondant pudding with granola, strawberry compote and strawberry ripple ice cream.

 

All wines during the evenings were provided by de Burgh Wines and were carefully chosen in order to complement each of the courses. All of the dishes were prepared using fresh island produce, celebrating the food that the Isle of Mull and Iona have to offer.  Tickets were limited for the events on July 20th and July 21st, yet sales proved a success and left everyone including Gary with an amazing and unforgettable experience.
